Notice he never took that bet. He pointed out that their last few encounters with Patron Saints have demonstrated how overwhelmingly powerful they are and saying there’s no way she can match. But he never took or shut down the bet.

With how Saints become what they are wanted and believed to be, this reminds me of (irl) conservative Christian's approach to the law as a punishment for not being like them. The saints respond to the community, the community wants the saints to punish them. We aren't faithful enough, this is the collapse of civilization. We always need to go back to the good old days that aren't actually real. I feel like turning the saints wouldn't be easy though, whatever the saints are doing would be self-reinforcing. It doesn't make sense for a society to believe the saints will punish them when the saints are only benevolent, nor for a society to believe the saints will stop when they eat people. You'd need a disruptive event. Something to introduce doubt
